According to the UN, 800 million people around the world do not have access to electricity, and 2.6 billion do not have access to clean fuel sources for cooking; the lack of access to cooked food has several consequences, such as: damaged food becomes the focus of infections, chronic diseases and malnutrition. Due to the lack of access to electricity and technology, the solution does not necessarily have to be a sophisticated system; with a brief review of the past we find alternatives without electricity such as underground ovens, which do not need electricity or fuel to operate.
Underground ovens can work with radiation, directly through the fire, and convection, thanks to the smoke and steam, some other underground ovens used other materials besides fire to evenly distribute heat with fired clay balls and medium size rocks. Even though the technology and the ways are different, modern and underground ovens are more similar than initially thought, sharing the same principles as the ones we have nowadays.
After extensive research, it was decided to design and build a subway oven inspired by the Mexican pit oven, incorporating a ventilation system based on the tandoor design and using banana leaves to cover the food. It is based on the efficiency and reusability of the Mexican pit, allowing for more food to be cooked and used multiple times. Combined with the ventilation of the tandoor, it seeks to optimize air flow, which improves combustion and, therefore, the quality of flavor in the prepared dishes.

Tools and Materials:
Shovel – Bricks – Rod – Metallic Sheet / Plastic Membrane
Herramientas y Materiales:
Pala – Ladrillos – Varilla – Lámina de metal / Membrana de Plástico
Step 1:
Look for a land conditioned for the elaboration of the oven, the land must have a plain of 2m x 2m and that the wind arrives easily.
Paso 1:
Step 2:
Dig a circular hole 100 cm in diameter and 80 cm deep.
Paso 2:
Step 3:
Create a hole with a maximum diameter of 15 cm, diagonally to the furnace opening.
Paso 3:
Step 4:
Stack the bricks, keeping the diagonal perforations, creating a tower, reaching up to 50 cm, close the gaps between bricks with the soil excavated from the hole.
Paso 4:
Step 5:
Using the rods, make a circular grid 95 cm in diameter. Place the grid on top of the brick tower, leaving a gap between the bricks and the wall of the hole.
Paso 5:
Step 6:
Fold the metal sheet, giving it a circular shape. The sheet, once made, should be placed on top of the grating, surrounding the hole.
Paso 6:
Important Note:
When the oven is not in use, cover the ventilation holes with the lid and place the stones on top to protect them from rain, water, debris, and other foreign materials that could enter the oven and affect its performance.
Nota Importante:
